Candy Making: Chocolate, Caramel & More
As with many holidays, Halloween is an occasion celebrated with candy. Hordes of prowling kids take to the streets hunting door to door through the cold evening in pursuit of the next sweet fix. And yet, like many foods, commercialism has gotten the better of us, and we have let massive corporations take the fun of candy making out of our hands and onto store shelves. We have lost the recipes of earlier generations for the sake of convenient bags of industrially manufactured, chemically enhanced sugar covered in cardboard flavored chocolate. But it wasn’t always this way; parents used to treat children to homemade sweets that were fun for kids of all ages. Join us as we learn a few old candy recipes that will make your holiday season something special! We’ll learn how to cook chocolate caramels, candied fruits, gummies, and even candy bars with crunchy filling! This Halloween don’t be haunted by leftover plastic bags full of metallically-sweet artificial additives. Use your cooking tricks to share a real treat with your visitors this season. You’ll be so delighted with the results you may even be tempted to keep them for yourself!This is a participatory cooking class. A small group of 3-4 students will work together at each cooking station to complete the recipes on the night's menu."Jacob is knowledgeable, enthusiastic, and good with cooks of all skill levels. Crafting a Charcuterie Board from Repurposed Woods
Join us for a delightful 2-session woodworking experience as we delve into the enchanting world of charcuterie board-making which will become a treasured keepsake, or gift, and topic of discussion! If you are news to woodworking, we recommend you take the Introduction to Woodworking and Shop Tools Workshop on Oct 9th to get comfortable using the tools prior to taking this course. In this hands-on class, you will learn the art of creating visually stunning and unique charcuterie boards that will impress your guests on any occasion. During the workshop, students will choose from a wide variety of new and repurposed fine woods to create a visually stunning piece that can last a lifetime. Prepared woods may include Maple, Ash, Purple Heart, Walnut, Birch, Australian Eucalyptus, Brazilian Cherry, Oak, Coconut Wood, Ipe, and others. All materials are included in the fee for this course. Students will decide on the design they wish to use and choose their woods. Since the wood will be of various thicknesses, students will need to plane them to an equal thickness and then glue and clamp the wood to form the board. Tools used: mitre saw, table saw, planer, and clamps.For the second class, students will sand or plane their glued boards to get a uniform smooth surface. They will then draw and cut their handle design on the board. Tools used: planer, sander, band saw, scroll saw. Lastly, all boards will be sanded, thoroughly cleaned and coated with food-grade oils to penetrate and seal the boards. Extra oil will be given to each student to repeat this process at home. Tools used: Sander.Note: The electric tool usage can create a bottleneck in the shop, so please be patient and use this time to learn and help others during class time. Please bring safety glasses and a dust mask if you have one. We have a small supply on hand. Mixed Level Wheel Throwing Thursdays with Jessica LaBonte- 12 weeks!

If you are just beginning your wheel throwing journey, or if you have some experience, but want to learn more while you work independently, then join us for Mixed Level Wheel Throwing with Jessica LaBonte, owner of Cedar Tree Pottery. During these 12 weeks you will learn new skills, or refine your techniques, and create beautiful ceramics with as much instruction as you need. At the CVU ceramics studio, we offer and welcome a fun and judgement-free collaborative environment for potters of all levels. Only 10 spots available! Students will have access to stoneware, mid-fire clay, Cone 6. All clay, glazes (brushed and dipped), use of the studio, tools, as well as firing costs are included in the fee. NOTE: Only the provided glazes and clay are allowed in the studio. BONUS: Free access to "Open Studio" on Monday evenings 5pm-8pm starting Sept 29-Dec 22. No open studio on 11/24. Moving Beyond Automatic Settings With Your Digital Camera
PHOTOGRAPHY, TECHNOLOGY, & DIGITAL SKILLS
This 2-session course will introduce students to their DSLR’s priority and full manual modes. By learning how and when to use each mode, students will gain greater creative control over their cameras. More advanced composition concepts will also be discussed based on students questions, levels and experience. Students will need to have a DSLR, mirrorless, or fixed lens camera capable of aperture and shutter priority and full manual modes. Long exposure and light painting will require a tripod. Session 1: This class will explain the exposure triangle and how to set exposure. Students will be introduced to and encouraged to explore of their camera’s priority modes. Needle Felted Pumpkins

Have fun creating a trio of small decorative pumpkins using needle felting tools and techniques. No experience necessary! Felting is a great way to unwind and encourage your creativity – come have some fun with felt! Includes all materials. An assortment of wool colors will be available to choose from. Participants will go home with 3 needle felted pumpkins. For ages 13 and older. Please be advised that needle felting requires the use of very sharp needles.

Needle-Felted Holiday Ornaments

Come learn the art of needle felting and create a two-dimensional wool sculpture using a special barbed needle. We will use cookie cutters to help create a fun holiday shape (trees, candy canes, etc.). Add a pin to turn your design into a brooch, or add some string to create a hanging ornament. Needles, wool roving, cookie cutters, and other felting materials will be provided. No experience necessary. Ages 14 and up. Students aged 10-13 are welcome with a caregiver who should also register for the class.

Next Steps in Knitting – Knit a Cozy Hat

Join us for this fun, informative class to learn how to knit a hat! You will learn to Cast On, Knit, Purl, Decrease, and Bind Off. We will talk about yarn, needles, gauge, tools of the trade, and pattern reading. Hats are fun to knit and wear, plus they make great handmade gifts. If you’ve done a bit of knitting before, this class is just the thing to take you through the next steps in your journey! Required Materials: Yarn: 145 - 200 Yards of #5 Bulky Weight Yarn (Berroco Ultra Wool Chunky or similar) Knitting Needles: US 10 or 10.5 16” Circular Needle (to start knitting the ribbing of the hat), US 10 or 10.5 Double Pointed Needles (to decrease for the crown of the hat) Other Tools: Darning Needle, Stitch Marker (or scrap yarn), scissors Optional Materials (if you want to add a pompom): Yarn: 10-20 yards matching or contrasting yarn for pompom (this can be any weight yarn and is a fun way to use up scraps!) Are you prepared and do you know what to do in these time sensitive situations? Join local veterinarian, Dr. Viola Chu, for this one-night presentation of life-saving information and where all your questions will be answered! This class will cover common unexpected situations with cats and dogs and address what pet owners can do at home, when they should rush their pet into the emergency room, when they can wait, and also, what they shouldn't do!" Oil Painting for Beginners

In this 4- session intro to oil painting course you will cover a variety of oil painting techniques and will work on one landscape painting over the course of the workshop. Perfect for the novice just getting into Oil Painting, we will go over the fundamentals of Oils from the perspective of a landscape painter and focus on simple graphic shapes while having fun building dynamic beautiful scenes. We will go over shape language, value, color, and mixing color. The main thrust of the class is to get you to have fun and develop an appreciation for the medium of Oil Paint while learning to think graphically. Bring a landscape photo or picture to the first class. A list of materials to purchase prior to class will be provided after registration. Oil Painting for Intermediate to Advanced Painters
ARTS & CRAFTS
Join us as we discover best practices for figurative and scenic painting while having fun and connecting with other artists. Each session we will be examining two or more fundamental techniques, and we will each have a hand picked subject to work on: either figurative or scenic. Students will learn the Frank Reilly Palette for portrait painting; examine artists like George Bridgman. The first class we will do introductions and the instructor will do a portrait in real time along with the class week to week. Artists are encouraged to paint what they like and to ask questions of each other as well as the instructor as we paint as a group together and dig deeper into what goes into making a fantastic oil painting. This is an upper intermediate class so prior experience with oils is required. Session 1 - Go over tools, materials. Go over Reilly pallet Students will paint on canvas and we will gesso and sand our canvases. We will start our underdrawings. Session 2 - We will continue our underdrawings and finish ideally halfway through the session We will then “ ink ‘ our faces or scenes in a sepia tone raw umber. George Bridgman will be covered during the drawing component of the class. Session 3- We will do a first pass on our faces mixing our paint with Gambol which is a drying medium which also allows the paint to be applied in washes. We will go for an average color that we can see throughout the reference image. Session 4 - We will do the Form Pass in which we paint over our first coat using oil paint with no additives. Fat over lean will be covered and why we adhere to the Fat over Lean rule. Students are encouraged to view the room! Session 5 - We will continue to work on our faces, or scenes. Students are encouraged to continue to network and share ideas and approaches. Students, please bring your own painting materials together with photos, objects, or ideas of what you want to explore in paint. Table top easels are available for use during class. (Note: Only odorless solvents are allowed in the CVU building such as Terpenoid or Gamsol) Recommended age: 18+

Open Lathe Workshop II -Bowl Turning with Eddie!

This is an open studio style, 10-session workshop, designed for those that have taken the Access Bowl Turning Workshop with Eddie previously OR those that feel comfortable in a woodworking shop and can use a lathe independently. With a small class size, this allows each student to work on their own lathe while Eddie supervises and helps wood bowl turners as needed. Blanks will be available to purchase ($10 each- cash), or BYO wood blanks. Want to buy your own gouge? Contact us for recommendations. Wear closed toed shoes, hat (hair tied back), and bring your own protective eye wear/goggles. No loose clothing or accessories! "Eddie and this class was just the bowl-turning experience I was looking for. I’d had some prior turning instruction and time on the lathe, but with Eddie I was able to work semi-independently, make my own errors, ask for advice and really progress. Open Lathe for All Levels- Woodturning with Nick Rosato

Join Nick Rosato, a professional wood turner and owner of Vermont Peppermill, for 5-weeks of open lathe. This course is designed for all levels of woodturners that would like use of the CVU woodshop, more dedicated time on the lathe, and to connect with other turners. Instruction will be given as needed weather you are a novice or advanced turner! Each participant will have their own lathe to use, and may bring in pre-approved projects in addition to turning bowl and spindles. Purchase wood blanks during class for ($10 each cash) or bring in your own. Safe practice, proper tool use, and properties of wood will also be covered throughout the course. Pasta Making 101

Learn the basic techniques of making fresh pasta by hand in your own kitchen; no machine necessary, just a rolling pin and muscle. You will first learn the techniques for making fresh dough, and then how to form a variety of shapes such as Orcchiette, Cavatelli Garganelli, and bows. In addition you will make sauces to match the different pasta shapes. We will bring out the artist in each of us and it will all taste delicious! It’s simple, delicious, and fun for all generations! Permaculture is a design science rooted in the observation of natural systems. Join us as we dive into the principles of permaculture and learn how to design ways of living that have the stability and resiliency of natural systems. In this class we focus on positive solutions for creating and managing systems for food, medicine, water, shelter, and more. Permaculture is a multi-disciplinary art form, drawing from the physical sciences, architecture, nutrition, the healing arts, traditional ecological knowledge (TEK), and spirituality. The ethical underpinnings that guide permaculture are simple yet powerful: take care of earth, take care of the people, and share the surplus.

Planning Photoshoots with the PhotoPills App - ONLINE

The PhotoPills App is a comprehensive "Swiss Army knife" for photographers, offering extensive tools for planning shoots, including day, night, and astrophotography. Its broad range of tools (or “pills” how they call them) make it very versatile, but also rather intimidating to use for novices. This lecture gives an introduction to the app and guides through several scenarios how to plan photoshoots like aligning a rising full moon with a building or a mountain. This is an online and interactive workshop presentation using Zoom. An email will be sent prior to the start date with information on how to join. Plant Propagation

This practical workshop offers a broad overview of many different types of vegetative (asexual) plant propagation; crown division, root cuttings, scaling, tip layering, softwood and hardwood cuttings. We will discuss which techniques work best for different species and genera. Come learn how to make more grape, currant, hardy kiwi, mulberry, quince, fig, blueberry, honeyberry, seaberry, blackberry, raspberry, strawberry, chive, horseradish, mint, lemon balm, comfrey, daylily, true lily, rhubarb, asparagus, sunchoke, rosemary, lavender, oregano, thyme, and many more. Participants will practice some of these techniques and take home plants in this workshop. This class will meet inside CVU.

Reiki Shoden- Level 1

Reiki Shoden (Level 1) is the introductory course into the traditional Japanese healing art of Reiki, focusing on self-healing and personal energy awareness. Shoden means “first teachings,” and this course serves as the foundational step for anyone wishing to explore Reiki for personal growth, wellness, or future practice. What You Can Expect: Introduction to Reiki: Learn the history, principles, and philosophy of Reiki as developed by Mikao Usui. Energy Awareness: Discover how to sense and work with your own energy and the energy around you. Hands-On Healing Techniques: Learn the basic hand positions for treating yourself and others using Reiki energy. Reiju/Attunements: Receive traditional energetic initiations (Reiju) that open and align your energy channels for Reiki flow. Slow Flow Afternoon Yoga with Ellen

This yoga class moves slowly and with intention so that the student can focus on being in the present moment. The integration of breath while holding poses for longer periods of time allows students the option to go deeper in a pose or find more softness. Suitable for beginners and seasoned practitioners alike. Bring your mat and water bottle, as well as blocks and strap (towel), if available. We will have some yoga mats & blocks available to borrow. Small Market Basket

People in every culture have been crafting beautiful, durable and useful vessels from various materials for thousands of years. Come try this age old tradition and create your very own Market Basket with a wooden handle. This is a 2 part class, suitable for any level of weaver. Using traditional weaving techniques you will create a durable basket for storage, carrying, or a decorative art piece. Students should wear clothing that can get stained and bring an old towel to class. Staining of the fingers and hands will occur when working with pre-stained reed (the stain is all natural and wears off within a couple of days). All quality materials* included. *Participants should bring a pair of rubber gloves or disposable gloves, and a plastic bag to bring the basket home in if they wish to stain their basket. Souffle- Savory, Sweet & Everything Nice

Soufflé is a delicious treat rarely seen in kitchens these days, relegated to the dessert menus of fancy french restaurants. Few if anybody still makes them in their home kitchen. They are considered a dish best avoided, seen as too finicky, too time consuming, and too hard to make. A dish lost to time, still suffering from the stigma of bygone years. Yet these difficult delectables still have the sophistication to impress, and with the right knowledge and equipment, soufflés become quick and easy to make. Come and learn the art and science behind how to turn simple eggs into an elegant dinner. You'll learn about stabilizing egg foam, the soufflé base, and you'll practice making both sweet and savory soufflés, before getting to try the finished product. Use the skills you learn to impress family and friends next time you host dinner. This is a participatory cooking class. A small group of 3-4 students will work together at each cooking station to complete the recipes on the night's menu.

Spanish Level 1 for Beginners- 12 Sessions!

Join Dunia Partilo, a Vermont licensed educator and native from Spain, and learn one of the most widely spoken world languages useful in business and travel. This 12-session course focuses on conversational skills through dialogues, vocabulary and typical expressions that are very useful in order speak the basics of the Spanish language. Each class will also follow the text, "Language Hacking: A Conversation Course for Beginners, Spanish", By Benny Lewis as a guide for practicing at home. Please note: February and March will be online. April and May will be in-person at CVU Highschool. Please purchase the textbook, "Language Hacking: A Conversation Course for Beginners, Spanish," by Benny Lewis prior to the start of the first class as this will be used throughout the course. If you are planning to travel to any Spanish speaking country in the future, and you need to boost your Spanish skills this class is for you! Dunia Partilo, native Spanish teacher, invites you to continue learning Spanish through practicing more complex grammar and vocabulary. If you have some Spanish knowledge or have taken Beginners Spanish, this class is for you! In this 12-session course, students will need to purchase prior to the start of class, the practice workbook, Practical Spanish Grammar from Marcial Prado. Dunia will assign additional fun activities, and you will learn interesting cultural facts as well as engage in discussions and conversation as the course progresses. Stained Glass with Charlotte Sylvester

Charlotte Sylvester has been practicing stained glass since 2020 and is looking forward to guiding you through this intricate, interesting and inspiring process from start to finish. During this 5-session course, students will learn the fundamentals of the Copper Foil Technique and leave with a beautifully finished stained glass creation. Choose an entry level ‘cartoon’ or template, and learn the nuances of glass cutting, shaping, grinding, copper foiling and soldering. Students will first create a practice piece and with their newly discovered talent, they will craft a stained glass masterpiece to cherish or gift. Sign up early as there are limited spots available. Courses will be offered both in the fall and spring semesters to help accommodate this popular offering. This class is geared for beginners or intermediate levels, age requirement: 18+. All materials and tools are provided for use during this course. Requirement: Closed-toed shoes and pants. Safety glasses, gloves and mask are provided; please feel free to bring your own. Successfully Overwinter Honeybee Colonies with Confidence

Join veteran beekeeper and owner of Swaying Daisies Honeybee Farm, Gerald Posner, as he shares his practices and procedures for helping honeybee's successfully overwinter in the harsh climate of Vermont. This honeybee care course spends both time in the classroom as well as at the bee hive colonies onsite at the CVU “Raging Rooster” farm! Each class will split time between the classroom, and in the apiary performing hands-on activity. Each attendee will have the opportunity to practice “best in class” activities to successfully overwinter their honeybee colonies. This course is designed for those that are currently beekeeping with established hives or have already started beekeeping. During the allotted classroom time, students will review and reference published articles as well as discuss concerns and tried and true or tired and failed experiences of overwintering bees. During the allotted time at the onsite CVU apiary we will cover: Brood inspection. Frame / super / deep box adjustments. Formic Acid application Hive box configuration Insulation type & configuration Supplemental food, essential oil and vitamin applications. Please dress according to the weather and bring beekeeping suits, or wear a white long-sleeved shirt, outdoors shoes and bring your beekeepers veil. (some extra veils will be available to borrow).
