Baking with Sourdough Workshop
COOKING & BAKING
Ruah Swennerfelt, a homesteader and sourdough lover will share about the magic of sourdough in this two-part course. Sourdough becomes your yeast for bread, and so much more. Dream of wild yeasts living all around you! You'll go away with starter, recipes for bread and more, and the hands-on knowledge to create sourdough baked goods at home. On the first night you will get your starter going, taste some artisan sourdough bread baked earlier that day, and see the dough in action, readying for a loaf to be baked the next day. Walk away with a recipe for how to make your own starter, how to take care of it, keep it alive and play with it. Take home a bread recipe to try. We’ll look at various resources and items to have in your kitchen to make sourdough successfully at home. Between classes you'll have some homework: keep your own starter alive using Ruah's expert tips and the instructions provided. In the second class you'll bring your starter and make some yummy baked goods like coffee cake, cookies, and more. You will need a digital kitchen scale for feeding your starter; if you don't already own one, please plan to purchase one ahead of the first class (similar to this). This is a participatory class. While each student will make their own starter on the first night, a small group of 3-4 students will work together at each cooking station to complete the baking recipes on the second night. "I cannot recommend this workshop enough! Ruah completely took away all my fears about working with a starter. I finally feel confident and excited to care for my starter at home. We learned not only how to nurture our starters but also how to get creative with the discard in delicious recipes. Ruah's vast experience and approachable teaching style made the class enjoyable and easy to follow, regardless of our varying skill levels. It was such a positive and inspiring experience that I would absolutely take this class again and invite my friends to join me. It's a must for anyone interested in baking!" Choux Pastry: From Savory to Sweet
COOKING & BAKING
The exquisite éclair. The classic profiterole. The addictive gougère. All of these famous French snacks have something in common; they’re made from choux pastry. The strange, gummy dough resulting from water, flour and eggs mixed together and cooked twice creates a wonderfully airy and crunchy casing begging to be filled with chocolate, pastry cream, cheese or anything the heart desires. These wonders of the pastry art can seem as daunting as building a croquembouche, but with practice and the right technique, delicious crunchy treats are only an oven away. Learn how to perfect your choux dough and assemble classic pastries, how to use craquelin to make your creations even crunchier, and practice famous fillings such as crème légèar, beurre au chocolate, and of course cheese. Join us for an evening of choux pastry delight and bring home the joys of a French Patisserie to your own home kitchen. This is a participatory cooking class. A small group of 3-4 students will work together at each cooking station to complete the recipes on the night's menu.

Circle-Singing Workshop
MUSIC & LANGUAGES
Based on practices developed by Bobby McFerrin and his collaborators, Circle Singing is a supportive, judgment-free space to sing with others without having to read music. Leaders create songs in the moment — patterns, percussive sounds, rhythms, harmonies, melodies — and teach the parts orally to the rest of the group. The parts layer together into completely original compositions, each song a unique creation, never sung before, never to be sung again. Jody will lead the group singing and will also teach different aspects of how to create an improvised ‘song’ for singers who want an opportunity to lead. There will be no pressure to lead if you don’t feel ready! It's a playful, joyful community singing experience. All voices are welcome! Feel free to contact Jody at jjalbright58@gmail.com if you have any questions.

Conversational Italian for Intermediate to Advanced Learners - ONLINE
MUSIC & LANGUAGES
Benvenuti in Italia! “Conversational Italian” is dedicated to your needs and wants in this beautiful language. For this reason, the preliminary assignment for the first class is for you to prepare a realistic list of things you would like to learn given the number of sessions we will have. This is the ideal equation: Beginning of class + End of class = I learned what I wanted to know! If you wish the class to be conducted in Italian or have a hybrid approach (Italian and English) you must all agree to this for obvious reasons. Having a hybrid approach is beneficial and Cinzia will explain her philosophy in this regard. Not sure what level of Italian you are at? No problem! Sign-up and decide after the first class if this will meet your needs. This is an online class. A Zoom or Google Meet invitation will be emailed prior to the start date. All handouts will be emailed directly from the instructor. "I have taken this online Italian conversation course with Cinzia for three years, and it is a great touch-point every week to practice the language and even meet new friends in Vermont who also have an interest in the language. Some of these friendships from the online class have transitioned into real life friendships, as we continue to meet after the class is over to practice Italian together!" "I really enjoy these classes with Cinzia. They provide an opportunity to practice Italian in an informal, friendly and chatty atmosphere. Cinzia sends materials between classes but homework is more or less at the individual's discretion. It helps me keep on my Italian and especially practice my listening and speaking skills with a native speaker. Cinzia is funny, warm, and great at teaching colloquial details."

Crafting a Charcuterie Board from Repurposed Woods
ARTS & CRAFTS
Join us for a delightful hands-on, two-session, experience as we delve into the enchanting world of charcuterie board-making which will become a treasured keepsake, or gift, and topic of discussion! In this hands-on class, you will learn the art of creating visually stunning charcuterie boards that will impress your guests on any occasion. During the workshop, students will choose from a wide variety of new and repurposed fine woods to create a visually stunning piece that can last a lifetime. Prepared woods may include Maple, Ash, Purple Heart, Walnut, Birch, Australian Eucalyptus, Brazilian Cherry, Oak, Coconut Wood, Ipe, and others. All materials are included in the fee for this course. Students will decide on the design they wish to use and choose their woods. Since the wood will be of various thicknesses, students will need to plane them to an equal thickness and then glue and clamp the wood to form the board. Tools used: mitre saw, table saw, planer, and clamps. For the second class, students will sand or plane their glued boards to get a uniform smooth surface. They will then draw and cut their handle design on the board. Tools used: planer, sander, band saw, scroll saw. Lastly, all boards will be sanded, thoroughly cleaned and coated with food-grade oils to penetrate and seal the boards. Extra oil will be given to each student to repeat this process at home. Tools used: Sander. Note: The electric tool usage can create a bottleneck in the shop, so please be patient and use this time to learn and help others during class time. Please bring safety glasses and a dust mask if you have one. We have a small supply on hand. Long hair will need to be tied back and no open toed shoes. "Tony is a very dedicated, enthusiastic teacher with a clear love of his craft. He was so generous with his time, often starting class early and always willing to stay late to make sure everyone left with a satisfying product. I recommend his class whole-heartedly!"
