Charcuterie Board Workshop
Join us for one of our most popular classes, a two-session woodworking experience where you’ll create a charcuterie board that becomes a lasting keepsake, gift, or centerpiece. No experience is necessary. I’ll have wood prepared in various states so you can do as much or as little power-tool work as you’re comfortable with.Although this is a beginner class, we’re also offering an Introduction to Woodworking and Shop Tools workshop for students who want to experience a wider variety of tools. It’s a great standalone class and not required for this workshop, but highly recommended if you are not familiar with woodworking hand and power tools.All woods used in this class are repurposed/reclaimed—sourced from pallets, shipping containers, and old furniture. You’ll choose from a wide selection of hardwoods (maple, ash, purpleheart, birch, Brazilian cherry, oak, and more). For this session, there’s also a healthy supply of reclaimed black walnut with rich color and striking grain. All materials are included, and students are welcome to bring their own wood if they’d like to repurpose it.What you’ll do Session 1: Choose from a large selection of hardwoods. Some pieces will be ready to use; others will need preparation—planeing, jointing/edge-joining, glue-up, and clamping—to form your board blank. Tools may include the miter saw, table saw, planer, and clamps. Session 2: Refine your board by sanding or planeing to a uniform surface, then draw and cut your handle/profile on the band saw or scroll saw. Finish by sanding smooth, cleaning, and applying food-grade oil. Each student gets extra oil for at-home care.By the end, you’ll leave with a finished, food-safe charcuterie board that’s both functional and beautiful—ready to use or gift. Every student will go home with their own beautiful and uniquely crafted board.Please bring safety glasses and a dust mask if you have one. We have a small supply on hand. Join us for this certified training taught by American Heart Association Basic Life Support instructors from Shelburne Rescue.**HeartsaverⓇ CPR AED Training- Night One (3 hours) 11/3 6-9pm and offered again on 12/1 6-9pm HeartsaverⓇ CPR teaches Cardiopulmonary Resuscitation (CPR) with the use of an Automated External Defibrillator (AED), as well as relief of foreign-body obstruction (choking) for adults, children and infants. This course is designed for anyone with little or no medical training who need or want an American Heart Association course completion card in CPR and AED to meet job or other requirements. Participants should check with their employer to see if certification meets the employer’s requirements. The card is valid for two years.The cost of the certification is $55 per student. American Sign Language (ASL) for Beginners Level 1
MUSIC & LANGUAGES
Are you motivated to learn SIGN language? ASL is the visual gestural language used by the Deaf community. It has its own unique grammar, sentence structure, and facial expressions. This class is for anyone that is new to ASL or looking for a refresher. Don is part of the deaf community and promises this immersive class will be fun and filled with plenty of conversation as well as practical exercises. In the first class, we will have an interpreter to help communicate the class syllabus. In these 9-sessions, you will learn about Deaf culture and how to communicate with basic introductions, numbers, alphabets, colors, food, people, places, restaurants, geography, etc. Handouts and videos will also be introduced weekly to help reinforce your newly learned skills. Some homework will be assigned to help you progress with ease. Recommended minimum age: High School Note: ASL 2 will be offered in Spring 2026. An Evening of Chinese Food

Spend an enjoyable evening with Evelyn as you explore the art of creating delicious noodle dishes, beginning with a classic favorite: Chicken and Shrimp Lo Mein. In this hands-on class, you’ll discover the variety of ingredients that can be used to build flavor and texture in lo mein, as well as learn about different noodle types and easy alternatives you can use at home. Evelyn will guide you through techniques that make this dish both approachable and versatile, giving you confidence to recreate it in your own kitchen. To end the evening on a sweet note, you’ll prepare Mango Sago Pomelo Pudding—a refreshing dessert that originated in Hong Kong and has become a modern Asian favorite. This creamy, fruity treat combines the brightness of mango with the delicate textures of sago pearls and pomelo. Along the way, you’ll learn how to properly handle and prepare these delicate ingredients to achieve the perfect balance of flavors and consistency. Whether you’re a beginner or an experienced home cook, this class is designed to expand your skills while treating you to a delicious cultural experience. This is a participatory cooking class. An Evening of Japanese Food

Join Evelyn for a flavorful evening learning to make two Japanese-inspired favorites: Katsudon and a no-bake Matcha Tiramisu. The class begins with Katsudon, a comforting rice bowl topped with golden, crispy pork cutlet simmered in a savory-sweet sauce. Along the way, Evelyn will share the origins of pork katsu and demonstrate a special technique to achieve a perfectly crisp cutlet—without the usual kitchen mess or splattering oil that frying often brings. This method will make it easier and more enjoyable to recreate the dish at home. To round out the evening, you’ll prepare a Japanese twist on a classic Italian dessert: no-bake Matcha Tiramisu. Using clever substitutions, Evelyn will guide you through a simple yet elegant recipe that highlights the earthy richness of matcha. Autumn Harvest Botanical Candles

Enjoy the warm glow and blissful aroma of a crackling candle in the cool fall nights! May your light shine bright as the brilliantly colored leaves float to the ground. Join Kelley Robie of Horsetail Herbs and learn how to make your own natural “fireside candles” scented with essential oils. The basics of candle making will be covered as we create a Botanical Decorated Glass Votive Candle and a Luminous Tea Light Candle, using wooden and cloth wicks to create the soothing sounds of a soft crackling fire. Using soy and sweet-smelling beeswax as our base we will review necessary equipment and discover the nuances of candle making.

Beautiful Barn Quilts 24" X 24"

Come learn how to make your very own beautiful wooden barn quilt from scratch! The size will be 2’x2’ (that’s feet!). They look great just about anywhere and make awesome gifts for both inside or outside your home and of course on a barn! We will learn the steps to design and paint a geometric pattern, learn how to lay out and measure the layout and review colors. Between classes you will need to work on your quilt at home since each layer takes time to dry before being taped again. Choose your own design and identify colors at the first class. Create your own set of 8 holiday cards through the introduction of Printmaking! We’ll go through the materials and method of printmaking before participants create their own design and carve their own block. Inspiration will be provided for those who would like it! The class will allow all participants to print 8 notecards of their own to use this holiday season! This class is designed with the beginner printmaker in mind but all levels of experience are welcomed to join. All high quality materials are included in class fee. Botanical Mocktails, Cocktails & Mixed Drinks

This workshop will teach everything you need to know to start making flavorful herbal drinks at home using ingredients and supplies that you likely already have in your pantry. Join Kelley Robie, of Horsetail Herbs, as we infuse, stir, and sip our way to sprucing up bare-bones drinks into something tastier, aromatic, and pleasing to the senses. We will explore the anatomy of a well-made drink, discover how to transform a cocktail into a mocktail (non-alcoholic drink) and learn what supplies to have on hand. We will do some taste testing, then make some recipes, using syrups, honey, botanical vinegars, bitters, teas, and tinctures. You do not need to drink alcohol to enjoy the recipes and techniques shared in this class!

As with many holidays, Halloween is an occasion celebrated with candy. Hordes of prowling kids take to the streets hunting door to door through the cold evening in pursuit of the next sweet fix. And yet, like many foods, commercialism has gotten the better of us, and we have let massive corporations take the fun of candy making out of our hands and onto store shelves. We have lost the recipes of earlier generations for the sake of convenient bags of industrially manufactured, chemically enhanced sugar covered in cardboard flavored chocolate. But it wasn’t always this way; parents used to treat children to homemade sweets that were fun for kids of all ages. Join us as we learn a few old candy recipes that will make your holiday season something special! We’ll learn how to cook chocolate caramels, candied fruits, gummies, and even candy bars with crunchy filling! This Halloween don’t be haunted by leftover plastic bags full of metallically-sweet artificial additives. Use your cooking tricks to share a real treat with your visitors this season. You’ll be so delighted with the results you may even be tempted to keep them for yourself! This is a participatory cooking class. Chocolate Candy Making 101
COOKING & BAKING
Come join us for a fun night of chocolate making, just in time for holiday gifting! In this course we will use a variety of different types of candy molds to make professional looking chocolates. You will learn how to make solid chocolates using milk and dark chocolate, and also how to make yummy filled chocolates with caramel and peanut butter. We will end the class by using a variety of decorative boxes, bags and foil wrappers to package up our chocolates. Each participant will leave with a variety of two dozen handmade chocolates. Please let us know during registration if you prefer milk or dark chocolate, or both. For students aged 13 and older. Children aged 8 and up are welcome to join with an adult caregiver who is also registered.

Choux Pastry: From Savory to Sweet

The exquisite éclair. The classic profiterole. The addictive gougère. All of these famous French snacks have something in common; they’re made from choux pastry. The strange, gummy dough resulting from water, flour and eggs mixed together and cooked twice creates a wonderfully airy and crunchy casing begging to be filled with chocolate, pastry cream, cheese or anything the heart desires. These wonders of the pastry art can seem as daunting as building a croquembouche, but with practice and the right technique, delicious crunchy treats are only an oven away. Learn how to perfect your choux dough and assemble classic pastries, how to use craquelin to make your creations even crunchier, and practice famous fillings such as crème légèar, beurre au chocolate, and of course cheese. Join us for an evening of choux pastry delight and bring home the joys of a French Patisserie to your own home kitchen. This is a participatory cooking class. Circle-Singing Workshop
MUSIC & LANGUAGES
Based on practices developed by Bobby McFerrin and his collaborators, Circle Singing is a supportive, judgment-free space to sing with others without having to read music. It's a playful, joyful community singing experience. Jody creates songs in the moment — patterns, percussive sounds, rhythms, harmonies, melodies — and teaches the parts orally to the rest of the group. The parts layer together into completely original compositions, each song a unique creation, never sung before, never to be sung again. Jody will also teach different aspects of how to create an improvised ‘song’ for singers who want an opportunity to lead. There will be no pressure to lead if you don’t feel ready! Comic Book Illustration- All Levels Welcome!

Welcome to the wonderful world of fantasy and narrative comic book illustrations! In this 4- session class we will go over how to draw figures within the context of an illustrated narrative using visual symbols to stylize the figure. Some examples of stylization are Manga style cartooning, American comic style cartooning, and cartooning for animation. We will create a character and then put that character within a narrative 1-2 pages in length. At the end of the course students will have a completed character sheet and a 1-2 page sequential story showcasing their character. Other topics covered will include, breaking a script, writing for comics, anatomy and perspective. This class is designed for students of all skill levels! A list of materials to purchase prior to class will be provided after registration. Minimum age: 14+ "The Comic Book Illustration class was absolutely fantastic! Creative Use of Shutter Speed
PHOTOGRAPHY, TECHNOLOGY, & DIGITAL SKILLS
Go beyond your photography of static elements and capture the effect of moving elements by manually controlling your shutter speed. We will explore different topics like moving water, ICM (intentional camera movement), subject movement, time lapse, freeze action and more. After an introduction to the topic we will experiment with several concepts in a Lab/Studio setup, so bring your camera and a tripod if you have one. You can bring and use your smartphone for this if you have an app that allows you to set the shutter speed of the phone’s camera. Digital Photography Bootcamp
PHOTOGRAPHY, TECHNOLOGY, & DIGITAL SKILLS
Got a digital camera and need a refresher on how to optimize photos using the different functions? In this 4-session course, we will review digital camera functions and how to use them, visual-design and framing considerations, as well as explore some Adobe Photoshop editing skills to bring your photos to life. We will take our camera outside, weather permitting, for a technical and visual exploration around the CVU campus. During registration you will have the opportunity to tell us what you are interested in specifically learning so the instructor can tailor the class to your level and interests. Emphasis will be on each individual student's interests. For novice through intermediate-level photographers. This class will use the CVU Photography Lab. Each student will have use of a computer loaded with Adobe Photoshop software. Ages: 16+ "The class was fantastic and Tom’s knowledge and instruction was equally wonderful.
