Sauces 101: Elevate Your Cooking
Picture a world where dinner is served without any of the sauces that would normally accompany your food. Eggs Benedict without hollandaise. Macaroni without cheese. Mashed potatoes without gravy. Such a world seems bleak, parched, and frankly unappetizing. A well made sauce is the workhorse and hero of the kitchen. It adds pizzazz to average dishes, palatability to dry food, and rescues vegetables and proteins from being overcooked. A sauce adds refinement to a dish, elevating it from weeknight dinner to Michelin star cuisine. Come and learn the art of sauce making as we tackle bearnaise, beurre noisette, pan sauces and others on a journey out of the desert of barren, bored chewing, and into the realm of elegant fine dining. Welcome to the sauce zone.This is a participatory cooking class. A small group of 3-4 students will work together at each cooking station to complete the recipes on the night's menu.

American Sign Language (ASL) for Beginners Level 1
MUSIC & LANGUAGES
Are you motivated to learn SIGN language? ASL is the visual gestural language used by the Deaf community. It has its own unique grammar, sentence structure, and facial expressions. This class is for anyone that is new to ASL or looking for a refresher. Don is part of the deaf community and promises this immersive class will be fun and filled with plenty of conversation as well as practical exercises. In the first class, we will have an interpreter to help communicate the class syllabus. In these 10 sessions, you will learn about Deaf culture and how to communicate with basic introductions, numbers, alphabets, colors, food, people, places, restaurants, geography, etc. Handouts and videos will also be introduced weekly to help reinforce your newly learned skills. Some homework will be assigned to help you progress with ease. Recommended minimum age: High School "Don brings real world use of ASL, facial expressions and deaf culture to communicate with deaf individuals that goes beyond simple words in ASL."

Baking with Sourdough Workshop
COOKING & BAKING
Ruah Swennerfelt, a homesteader and sourdough lover will share about the magic of sourdough in this two-part course. Sourdough becomes your yeast for bread, and so much more. Dream of wild yeasts living all around you! You'll go away with starter, recipes for bread and more, and the hands-on knowledge to create sourdough baked goods at home. On the first night you will get your starter going, taste some artisan sourdough bread baked earlier that day, and see the dough in action, readying for a loaf to be baked the next day. Walk away with a recipe for how to make your own starter, how to take care of it, keep it alive and play with it. Take home a bread recipe to try. We’ll look at various resources and items to have in your kitchen to make sourdough successfully at home. Between classes you'll have some homework: keep your own starter alive using Ruah's expert tips and the instructions provided. In the second class you'll bring your starter and make some yummy baked goods like coffee cake, cookies, and more. You will need a digital kitchen scale for feeding your starter; if you don't already own one, please plan to purchase one ahead of the first class (similar to this). This is a participatory class. While each student will make their own starter on the first night, a small group of 3-4 students will work together at each cooking station to complete the baking recipes on the second night. The instructors, or apiarists, have over 40 years of combined experience and will pass along not only the facts, but also tips from hands-on experience in the field and many years in the beekeeping business! Learn more about your bee passion from Vermont based beekeeping experts at this popular Access class. These three sessions will enlighten, and maybe even inspire you to start a few hives of your own! Plenty of question-and-answer time and all the info needed to start your own operation. A "possible" 4th field session may be offered. Phil Sharpsteen, a veteran of the game, will take you through each series with ease while meeting other bridge learners for an evening of fun, connections, and card playing. Club Series: No knowledge of bridge is needed in this bridge class which features a "hands-on" teaching approach with students learning the game by doing exercises with actual cards at the table. Learn the basic bidding system and card playing skills to build on with continued practice. Circle-Singing Workshop
MUSIC & LANGUAGES
Based on practices developed by Bobby McFerrin and his collaborators, Circle Singing is a supportive, judgment-free space to sing with others without having to read music. Leaders create songs in the moment — patterns, percussive sounds, rhythms, harmonies, melodies — and teach the parts orally to the rest of the group. The parts layer together into completely original compositions, each song a unique creation, never sung before, never to be sung again. Jody will lead the group singing and will also teach different aspects of how to create an improvised ‘song’ for singers who want an opportunity to lead. There will be no pressure to lead if you don’t feel ready! It's a playful, joyful community singing experience. All voices are welcome! Comic Book Illustration- All Levels Welcome!

Welcome to the wonderful world of fantasy and narrative comic book illustrations! In this 4- session class we will go over how to draw figures within the context of an illustrated narrative using visual symbols to stylize the figure. Some examples of stylization are Manga style cartooning, American comic style cartooning, and cartooning for animation. We will create a character and then put that character within a narrative 1-2 pages in length. At the end of the course students will have a completed character sheet and a 1-2 page sequential story showcasing their character. Other topics covered will include, breaking a script, writing for comics, anatomy and perspective. This class is designed for students of all skill levels! A list of materials to purchase prior to class will be provided after registration. Minimum age: 14+

Crafting an End Table from Repurposed Woods

Join us for an exciting new course led by woodworker Tony Hashem! This hands-on, two-session workshop offers a unique opportunity to craft a beautifully designed end table with shelves using repurposed pallets and a variety of fine woods. Under Tony’s guidance, you’ll create a timeless, visually stunning piece that can be cherished for years to come. Students will have the chance to select from a wide range of new and repurposed woods, including maple, oak, poplar, and pine, to personalize their project. For added customization, you’re welcome to bring your own wood for the table’s top shelf, while the structure and remaining shelves will be crafted from durable pine. The finished table will measure approximately 18" x 10" x 30", but students can adjust the dimensions within reason to ensure a perfect fit for their space. This course is designed for those with some prior experience using power tools, particularly power saws, as the process will involve measuring, cutting, gluing, drilling, and clamping. All materials and tools are provided, so you can focus on honing your skills and creating a functional, one-of-a-kind piece. Don’t miss this chance to learn from a seasoned craftsman and take home a handmade treasure! Spaces are limited, so reserve your spot today! Delightful Dragonflies

Dragonflies, and their smaller cousins the damselflies, re-appear in VT in May and June. Some migrate in from the south. Others emerge from wetlands after one to several years of maturation as under-water predators. Naturalist Laurie DiCesare will share macro photos, a bit of biology and field stories about these amazing aerial experts. She’ll also suggest where and when to search for them and how to gently catch-and-release them with a photo op to document your finds on iNaturalist. Digital Photography Bootcamp

Got a digital camera and need a refresher on how to optimize photos using the different functions? In this 4-session course, we will review digital camera functions and how to use them, visual-design and framing considerations, as well as explore some Adobe Photoshop editing skills to bring your photos to life. We will take our camera outside, weather permitting, for a technical and visual exploration around the CVU campus. During registration you will have the opportunity to tell us what you are interested in specifically learning so the instructor can tailor the class to your level and interests. Emphasis will be on each individual student's interests. For novice through intermediate-level photographers. This class will meet at CVU in the Photography Classroom Lab. Each student will have use of a computer loaded with Adobe Photoshop software. This course is offered by minimum donation. We will also work on some strategies that will help you to learn in the future. Through games, songs, videos, storytelling, and humor, you will acquire the language you need to get around if you are traveling or interacting with French speakers while acquiring some culture at the same time. Fused Glass Wind Chime

Come to this workshop to learn how to make your own set of wind chimes (or sun catchers) out of glass. The wind chimes can be hung outside in a protected spot, inside on a houseplant or in a window. Your finished product will be tack fired after class in a glass kiln and available for pick-up at CVU a week later. All materials are included in class fee. No experience required. For students ages 13 and older. Students aged 8-12 are welcome; they should register with an adult who is also registered for the class, and plan to have one dedicated adult for each child attending. Gardening for Pollinators
HOME & GARDEN, NATURE & ANIMALS
Join us as we learn more about pollinators, and growing pollinator friendly landscapes. Creating pollinator gardens doesn’t just help the bees; it also helps your fruits and vegetables. We will cover the key local and regional native perennials that provide pollinators with nectar and pollen throughout the season. This course also highlights host plants for caterpillars of butterflies and moths, and plants that provide for other pollinating specialists. Participants will take home plant lists and a greater understanding of strategies to incorporate these plants and techniques into your own garden space. This is a workshop for all levels, beginner to professional. This class will meet inside CVU.
