An Evening of Japanese Food
Join Evelyn for a flavorful evening learning to make two Japanese-inspired favorites: Katsudon and a no-bake Matcha Tiramisu. The class begins with Katsudon, a comforting rice bowl topped with golden, crispy pork cutlet simmered in a savory-sweet sauce. Along the way, Evelyn will share the origins of pork katsu and demonstrate a special technique to achieve a perfectly crisp cutlet—without the usual kitchen mess or splattering oil that frying often brings. This method will make it easier and more enjoyable to recreate the dish at home. To round out the evening, you’ll prepare a Japanese twist on a classic Italian dessert: no-bake Matcha Tiramisu. Using clever substitutions, Evelyn will guide you through a simple yet elegant recipe that highlights the earthy richness of matcha. The result is a dessert that is not only light and refreshing but also a true crowd-pleaser, perfect for sharing during holidays or special occasions. This class is designed for cooks of all levels who want to discover approachable techniques while enjoying the taste and culture of Japanese cuisine. Come ready to cook, learn, and savor every bite.

Moving Beyond Automatic Settings With Your Digital Camera
PHOTOGRAPHY, TECHNOLOGY, & DIGITAL SKILLS
This 2-session course will introduce students to their DSLR’s priority and full manual modes. By learning how and when to use each mode, students will gain greater creative control over their cameras. More advanced composition concepts will also be discussed based on students questions, levels and experience. Students will need to have a DSLR, mirrorless, or fixed lens camera capable of aperture and shutter priority and full manual modes. Long exposure and light painting will require a tripod. Session 1: This class will explain the exposure triangle and how to set exposure. Students will be introduced to and encouraged to explore of their camera’s priority modes. Exposure Triangle Aperture Priority Mode Shutter Speed Priority Mode Session 2: This class will build in the information from the previous class by delving deeper into the app and its features. Getting Creative with Mobile Photography Series
PHOTOGRAPHY, TECHNOLOGY, & DIGITAL SKILLS
This mobile series features three classes designed to expand the creativity and capabilities of students in the world of mobile photography. The courses are created in such a way that each class can be taken independently of the others but also build in skill and technique. Class 1 – Perspective Shift (Sept 16) This level 1 class will get students beginning to think creatively about the camera and subject placement when taking an image. Students will need to have a mobile phone and a basic understanding of the camera app. The course is designed around the default iPhone and Google camera apps. During this 2 hour workshop we will discuss: Working with camera elevation, angle, and distance. Working with basic compositional rules. Experimenting with panoramas Class 2 – Working with People (Sept 23) This level 2 class will teach students how to work with people and their surroundings to create more dynamic images featuring people. Students will need to have a mobile phone with a moderate understanding of the Camera app and its features. The course if designed around the default iPhone and Google camera apps. During this 2 hour workshop we will discuss: Working with the subject placement and the surroundings Working with the horizon line and leading lines Working with the available light Class 3 – Creating the Scene (Sept 30) This level 3 class will challenge students with advanced techniques in mobile photography. Students will need to have a mobile phone with a solid understanding of the Camera app and a willingness to experiment. The course is designed around the default iPhone and Google camera apps. Working with motion and burst shutter Selecting and locking focus and exposure Introducing additional lighting sources Abstractions Requirement for all classes: Bring your charged iPhone, Android, or smartphone. Introduction to the Lightroom Mobile App
PHOTOGRAPHY, TECHNOLOGY, & DIGITAL SKILLS
This 2-session course will introduce students to Adobe’s Lightroom Mobile application. The course will cover the creation and sharing of albums, editing of images, and the built-in camera. Students will need to have a mobile phone with the Adobe Lightroom Mobile app preloaded. The course will discuss the difference between the free and paid versions of the app; students are not expected to purchase the app. Session 1- This class will introduce students to Adobe’s Lightroom Mobile app and help familiarize them with navigating through its features. Navigating the app Creating and sharing albums Exploring the built-in camera in “Auto” mode Basic editing features Session 2: This class will build in the information from the previous class by delving deeper into the app and its features. Working with the built-in Camera in “Pro” and “HDR” modes Advanced editing Requirement for all classes: Bring your charged iPhone, Android, or smartphone. Bring a charging cord and wall plug.
