Eritrean/Ethiopian Cuisine - Vegetarian Specialties
Learn simple techniques to prepare ethnic food that is rich in flavor. Eritrean/Ethiopian cooking relies on a diverse range of herbs & roots to develop characteristics quintessential to the cuisine. Everyone will participate making a variety of vegetarian dishes including: Spiced mushroom - organic mushroom cooked with berbere spice, onion, garlic, ginger and tomato Curried lentils - split red lentils cooked with onion, garlic, ginger, tomato and curry powder. (Alganesh's signature dish) Greens - spinach cooked with red onion, ginger, garlic, fresh tomato, jalapeno and rosemary. Experience the culture and enjoy a delicious meal that will nourish your soul!This is a participatory cooking class. A small group of 3-4 students will work together at each cooking station to complete the recipes on the night's menu.This class will meet inside CVU.

Painting with Wool: Winter Landscape
Create a 2D winter forest landscape using needle felting techniques. Whether you are a beginner or a seasoned felter, this class will teach you how to make a landscape “painting” with wool. Felting is a great way to unwind and encourage your creativity - no experience necessary!Cost includes all materials & participants will go home with a beautiful felted piece in a 6 inch bamboo hoop or a 5x7 card.For students aged 13 and older.Please be advised that needle felting requires the use of very sharp needles.

Delightful Dragonflies
HOME & GARDEN, NATURE & ANIMALS
Dragonflies, and their smaller cousins the damselflies, re-appear in VT in May and June. Some migrate in from the south. Others emerge from wetlands after one to several years of maturation as under-water predators. Naturalist Laurie DiCesare will share macro photos, a bit of biology and field stories about these amazing aerial experts. She’ll also suggest where and when to search for them and how to gently catch-and-release them with a photo op to document your finds on iNaturalist. Mah Jongg For Beginners and Refreshers
FUN & GAMES
This American version of Mah Jongg will start with a simplified game where players, pick up, discard and trade tiles to form an easy winning hand. Over the course of 4 weeks, we'll slowly add more tiles, increase the complexity of the winning hands (using National Mah Jongg League cards) and will talk about defense and sleuthing. Mah Jongg players enjoy bluffing, learn flexibility, and generally have a lot of fun. If you like card games, you'll probably love Mah Jongg. This class will meet inside CVU.
