    Baking with Sourdough Workshop

    Ruah Swennerfelt, a homesteader and sourdough lover will share about the magic of sourdough in this two-part course. Sourdough becomes your yeast for bread, and so much more. Dream of wild yeasts living all around you! You'll go away with starter, recipes for bread and more, and the hands-on knowledge to create sourdough baked goods at home. On the first night you will get your starter going, taste some artisan sourdough bread baked earlier that day, and see the dough in action, readying for a loaf to be baked the next day. Walk away with a recipe for how to make your own starter, how to take care of it, keep it alive and play with it. Take home a bread recipe to try. We’ll look at various resources and items to have in your kitchen to make sourdough successfully at home. Between classes you'll have some homework: keep your own starter alive using Ruah's expert tips and the instructions provided. In the second class you'll bring your starter and make some yummy baked goods like coffee cake and more. This class will take place inside CVU.
  • Indian Appetizers: Pakoras, Chaats & Chutneys

    Welcome to the world of Chaats and Pakoras! There are lots of variation in each category, and Delna will introduce a few varieties. You will also learn to make tangy tamarind and flavorful herb chutneys which are an essential part of the recipe. Pakoras are gluten free, deep fried mixed vegetable fritters. Aloo Tikki (potato patty) chaat is a combination of sweet, salty, crunchy, spicy and savory ingredients. It has multiple layers of cooked and raw ingredients, topped with chutneys, store bought sev (thin chickpea noodles) and chaat masala. Delna is happy to adapt her ingredients to accommodate food allergies/sensitivities to gluten, soy, nuts and/or dairy. Please identify during registration if you would like accommodations.     Join Sally and learn the art of baking and decorating delicious cookies in this 1-night class. You'll start by mixing and baking "slice and bake" sugar cookies, making delicious icing, and then decorating your treats to bring home and share with friends and family. Each student will bring home a selection of decorated cookies. Students aged 13 and over welcome; younger students should be accompanied by an adult. This class will meet inside CVU.

    Taco Night in an Instant (Pot)!

    Authentic tacos are Mexico’s gift to the world. And with a few tips from Chef Ariel Voorhees – and an Instant Pot – you can enjoy delicious tacos no matter where you are! Chef Ariel will be your guide as you create a feast of three types of tacos, plus the accompaniments that will round out the meal. You’ll also learn to make delicious guacamole from scratch! Along the way, you’ll master the Instant Pot, hone your knife skills, get tons of hands-on instruction, and connect with classmates over great food.     Baking 101: Cupcakes

    Come learn the art of baking and decorating the perfect cupcake! Sally, our resident cake decorating instructor, will walk you through baking and decorating cupcakes in a 1-night class. You'll start by baking vanilla cupcakes and making delicious icing, and then you'll decorate your treats to bring home and share with friends and family (or eat them all yourself- we won't tell!). Each student will bring home a half dozen decorated cupcakes. Students aged 13 and over welcome; younger students should be accompanied by an adult. This class will meet inside CVU.

    Eritrean/Ethiopian Cuisine - Vegetarian Specialties

    Learn simple techniques to prepare ethnic food that is rich in flavor. Eritrean/Ethiopian cooking relies on a diverse range of herbs & roots to develop characteristics quintessential to the cuisine. Everyone will participate making a variety of vegetarian dishes including: Spiced mushroom - organic mushroom cooked with berbere spice, onion, garlic, ginger and tomato Curried lentils - split red lentils cooked with onion, garlic, ginger, tomato and curry powder. (Alganesh's signature dish) Greens - spinach cooked with red onion, ginger, garlic, fresh tomato, jalapeno and rosemary. Experience the culture and enjoy a delicious meal that will nourish your soul!     Mexican Cooking: Empanadas

    Join Ale, of Dona Alejandra Tacos, and learn to make authentic empanadas. You'll make two fillings: a flavorful chicken, and a tasty potato version that works for vegetarians (and vegans). Paired with a homemade red salsa, lettuce, cheese and sour cream, and you'll have a complete meal.     Vietnamese - Traditional Beef Pho

    Join Kim Dinh as she walks you through how to prepare pho, the Traditional Vietnamese beef noodle soup. She'll walk you through how to build the flavors of a delicious broth with spices and beef bones, and some shortcuts to speed the process along. You'll also learn to prepare the beef, and the assorted vegetables, herbs and sauces to customize your bowl exactly to your liking. There's nothing like a comforting bowl of hot pho!     Eritrean/Ethiopian Injera

    Injera is unique staple food to Ethiopia & Eritrea best known for spongy sourdough flatbread. It's a mixture of Teff (nutrient-dense & gluten-free), barley, corn & self-rising flour. Learn to mix the dough in class and carefully observe batter as it readies to be baked. Everyone will take a turn making injera and then take home a dinner prepared by Alganesh to enjoy. One meat and two vegetarian dishes will be served. This class will take place inside CVU.

    Vietnamese Stirfry & Kimchi

    Join Kim Dinh and learn to make two delicious traditional dishes: Thit bo xao rau cu- Vietnamese Beef stir-fry with lots of vegetables in a tasty savory sauce. This dish is highly customizable (hello picky eaters!) and will be a welcome addition to your meal rotation with family and friends. Kimchi- the traditional Korean banchan made of salted and fermented vegetables including napa cabbage and Korean radish This class will meet inside CVU.

    Torrone are light and delicate candies filled with nuts; with a little time and some hands-on experience, you will want to make these treats on an annual basis and really not difficult to make.
